Southern Louisiana
is home to some of the best cuisine in the world. From the world
famous restaurants of New Orleans
to the small country kitchens that are found in homes and
eateries deep in bayou country. Cajun and Creole cuisines are
revered worldwide for their cultural uniqueness and more
importantly…..for their distinctive and delicious flavors.
It is often asked, “What is the difference between
Creole and Cajun food?” And the best answer is….not much anymore
as three centuries of intertwining the two styles make it
difficult to make distinctions between them. Originally, Creole
cuisine was identified with the more formal meals where city
chefs of New Orleans
gave attention to presentation and an air of sophistication. It
was a cuisine influenced not only by the original French chefs
who settled there at the end of the 1600s but also by the
Spanish and African settlers along with the native Choctaw
Indians. It is what can be called
America’s
“original fusion” cuisine. “Creole” literally means “children
born in the colonies” and was coined by the Spanish settlers to
describe the offspring of so many ethnicities blending into one
distinctive culture.
The term “Cajun” is a derivative of the term “Acadian”.
In
the early 1600s, French peasants settled in
Nova Scotia, Canada.
When
Britain acquired
Canada
in the mid 1700s, many of the French loyalists were forced to
leave Canada…..and
South Louisiana became
their new homeland. They were mainly country folk, and as one
would expect, their style of cooking was done in a casual
country style. Unpretentious…..yet very hearty and delicious
meals.
I developed a love for these cuisines over two decades
ago and have spent many hours over the years perfecting the very
recipes that I have included on this menu.
This is why I decided on the concept of
the “Bayou Bistro.” A concept born in simplicity. A fully
equipped commercial kitchen on wheels that offers high quality
Cajun & Creole food that is authentic and true to its
origin…..at affordable pricing. Delicious meals for those on the
go as well as for groups of people who just don’t have the time
to take a “sit down” lunch
away from their workplace every day. A
tasty and affordable alternative to the typical fast food
window.
